This Cheesy Potato Stacks recipe is the ultimate comfort food upgrade—crispy on the edges, soft and tender in the middle, and layered with gooey, melted cheese that makes every bite irresistible.

Ingredients

Scale
  • 4 medium russet potatoes (about 800g, peeled and sliced thinly (1/8 inch))
  • 2 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 cup heavy cream
  • 2 cloves garlic (minced)
  • 1 tsp fresh thyme leaves (optional)
  • Salt and pepper (to taste)
  • Fresh parsley (chopped)
  • Extra cheese for sprinkling

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Grease a 9×9 inch baking dish or muffin tin for individual stacks.
  3. Slice potatoes thinly (1/8 inch) for even cooking.
  4. Toss slices lightly with olive oil, salt, and pepper.
  5. In a small saucepan, heat heavy cream and garlic over medium heat until warm.
  6. Remove from heat and stir in cheddar, Parmesan, and thyme (if using).
  7. Season lightly with salt and pepper.
  8. Layer potato slices in stacks (about 5–6 slices per stack).
  9. Spoon a little cheese mixture between each layer for extra creaminess.
  10. Repeat until all slices are used, finishing with a layer of cheese on top.
  11. Cover loosely with foil and bake 25 minutes.
  12. Remove foil and bake 10–15 minutes more until the tops are golden brown and bubbly.
  13. Let stacks rest 5 minutes before serving.
  14. Garnish with fresh parsley or extra cheese if desired.
