Description
This smoky Chipotle Chicken is marinated with chipotle peppers in adobo, lime juice, and warm spices, then cooked until juicy and flavorful.
Ingredients
Scale
- 2 6-ounce chicken breasts
- 4 tablespoons chipotle sauce
- 1 tablespoon lime juice
- 1 tablespoon chipotle powder (use chili powder as a substitute)
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon cumin
- Salt to taste
- 1 tablespoon olive oil
Instructions
- Add the chicken to a wide flat bowl or to a sealable plastic bag.
- Whisk together the chipotle sauce, lime juice, chipotle powder, garlic powder, onion powder, cumin and salt. Pour over the chicken. Be sure to rub the sauce into the chicken.
- Cover, then refrigerate and marinate at least 1 hour. You can marinate overnight for more chipotle flavor.
- When you’re ready to cook, heat a large pan or your grill to medium-high heat. Add the olive oil.
- Cook the chicken breasts about 5 minutes, then reduce the heat to medium. Flip the chicken and continue to cook another 7-8 minutes, or until it is cooked through. It should measure 165 degrees F. internally.
- Let the breasts rest for 5 minutes, then slice and serve.
