Description

This Chocolate Croissant Loaf is a decadent twist on the classic pastry, combining the rich, buttery, and flaky layers of croissants with the indulgent sweetness of dark chocolate in a delicious bread.

Ingredients

Scale
  • 1/2 cup + 1 tbsp Whole Milk (warmed to 110ºF-115ºF)
  • 2 tbsp Granulated Sugar
  • 1 1/2 tsp Active Dry Yeast
  • 2 tbsp Unsalted Butter (melted)
  • 1 large Egg (room temperature)
  • 2 cups Bread Flour
  • 1 tsp Salt
  • 3 oz Dark Chocolate Bar (finely chopped)
  • 14 tbsp Unsalted Butter
  • 1 large Egg
  • 1 tbsp Water

Instructions

  1. Add the warm milk, sugar, and yeast to the mixing bowl. Whisk, cover, then let sit for 10 minutes while it blooms.
  2. Add in the melted butter, egg, bread flour, and salt. Knead the dough until it is soft and smooth.
  3. Slice the unsalted butter into pieces and shape it into a rectangle. Chill until firm.
  4. Grease the bowl and let the dough rise for 90 to 120 minutes.
  5. Punch the dough down, roll it out, and chill for 20 minutes.
  6. Place the chilled dough with the butter slab in the center and fold the dough over the butter.
  7. Roll out the dough and fold it like a letter. Chill for 30 minutes.
  8. Repeat the rolling and folding process two more times, chilling in between.
  9. Finely chop the dark chocolate.
  10. Roll the dough into a rectangle, cut into strips, brush with water, and coat with chocolate.
  11. Dust with flour and roll into a rectangle. Press down the remaining chocolate.
  12. Roll into a tight log and place in the clay baker. Let it rise for 60 to 90 minutes.
  13. Soak the lid, pat it dry, and cover the loaf. Bake in a cold oven at 375ºF for 25 minutes.
  14. Brush the loaf with egg wash and bake for an additional 25-30 minutes.
  15. Let cool for 10 minutes before removing from the baker and cool completely before slicing.
