Description

Classic Cream Puffs are a year-round treat that will impress at your next gathering. They feature a choux pastry baked to a light golden brown, filled with chocolate whipped cream and topped with powdered sugar.

Ingredients

Scale
  • 1 cup Water
  • 1/2 cup Unsalted Butter
  • 2 tbsp Granulated Sugar
  • 1/2 tsp Salt
  • 1 1/3 cup All-Purpose Flour
  • 4 Large Eggs
  • 2 cups Powdered Sugar
  • 1/3 cup Dutch Process Cocoa Powder (or unsweetened cocoa powder)
  • 1 cup Heavy Cream
  • 2 tsp Vanilla Extract

Instructions

  1. Adjust your oven rack to the middle position and preheat your oven to 425ºF. Prep a large cookie sheet with parchment paper or a silicone liner.
  2. Add water, unsalted butter, granulated sugar, and salt to a saucepan. Stir over medium-high heat until the butter melts and the mixture boils.
  3. Remove from heat and add all-purpose flour, stirring vigorously until combined. Return to heat to stir until thick and smooth.
  4. Transfer to a stand mixer and beat on medium speed until steam dissipates and the sides cool slightly.
  5. Add eggs one at a time, ensuring each absorbs fully. The batter should be smooth, glossy, and elastic.
  6. Scoop out the choux pastry and place 1 inch apart on the sheet.
  7. Bake at 425ºF for 10 minutes, reduce to 375ºF and bake for an additional 25 minutes. Do not open the oven door during baking.
  8. Remove from oven, cut a slit in each puff to release steam, and cool on a rack.
  9. Chill your mixer bowl for 10-15 minutes before making the whipped cream.
  10. Add heavy cream, powdered sugar, cocoa powder, and vanilla extract to the chilled bowl. Beat on low until blended, then increase to medium-high until stiff peaks form.
  11. Slice cream puffs in half.
  12. Fit a pastry bag with a decorating tip and fill with chocolate whipped cream. Pipe onto half of the cream puff and top with the other half.
  13. Dust with powdered sugar and serve immediately. Store in an airtight container for 1 additional day.
