Ingredients

Scale
  • 1 cup Sushi Rice (Rinsed thoroughly for perfect stickiness.)
  • 1 1/4 Water (For cooking rice.)
  • 1 piece Kombu (Optional) (Enhances flavor during rice cooking.)
  • 2 tablespoons Unseasoned Rice Vinegar (Balances sushi rice flavors.)
  • 1 tablespoon Granulated Sugar (Adds sweetness to rice.)
  • 1 teaspoon Kosher Salt (Enhances flavor.)
  • 1 cup Vegetable Oil (For frying shrimp.)
  • 3/4 cup All-Purpose Flour (Chilling helps achieve crispiness.)
  • 1 cup Water (for batter) (For desired consistency.)
  • 1 large Egg (Binds the batter.)
  • 12 pieces Jumbo Shrimp (peeled, tails removed) (Choose high-quality shrimp.)
  • 4 sheets Nori Sheets (Wraps the ingredients.)
  • 1 medium Avocado (sliced) (Adds creaminess.)
  • to taste Soy Sauce, Wasabi, Pickled Ginger (For serving.)

Instructions

  1. Rinse the sushi rice until the water runs clear to remove excess starch. Combine the rice with water and add kombu; cook according to package instructions. Mix in vinegar, sugar, and salt, then allow to cool.
  2. In a medium bowl, whisk together the all-purpose flour, cold water, and large egg until smooth. Adjust consistency as needed.
  3. Heat vegetable oil in a skillet over medium heat until shimmering. Dip each shrimp in the tempura batter, then fry for about 2-3 minutes until golden brown. Drain on paper towels.
  4. Lay a sheet of nori on a bamboo mat. Spread an even layer of sushi rice onto the nori, place fried shrimp and avocado slices in the center, then roll tightly using the mat.
  5. With a wet, sharp knife, slice the roll into bite-sized pieces. Serve with soy sauce, wasabi, and pickled ginger.
