Das Butter Chicken: Easy, Creamy, & Irresistibly Delicious
Ingredients
Scale
- 500g Boneless, skinless chicken thighs (cut into 1-inch pieces)
- 200g Plain, full-fat yogurt
- 1 tablespoon ginger-garlic paste
- 1 teaspoon Turmeric powder
- 1 tablespoon Red chili powder (Kashmiri chili powder recommended)
- 1 teaspoon Garam masala
- 1 teaspoon Ground cumin
- 1 teaspoon Ground coriander
- 1 tablespoon oil or butter
- 2 tablespoons unsalted butter
- 1 large Finely chopped or pureed onion
- 400g Canned crushed tomatoes or tomato passata (or fresh ripe tomatoes, pureed and strained)
- Salt to taste
- 100ml Heavy cream or whipping cream
- 1 tablespoon Honey or granulated sugar
- 1 tablespoon Kasuri methi (dried fenugreek leaves)
Instructions
- Marinate the Chicken: In a large bowl, combine your chicken pieces with yogurt, ginger-garlic paste, turmeric powder, red chili powder, garam masala, ground cumin, and ground coriander. Mix well. Cover and refrigerate for at least 30 minutes, or ideally, 4-6 hours, or overnight.
- Cook the Chicken: Heat oil or butter in a large pan over medium-high heat. Add marinated chicken in a single layer. Cook for 3-4 minutes per side until browned. Remove and set aside.
- Prepare the Sauce Base: In the same pan, melt butter over medium heat. Add remaining ginger-garlic paste and sauté for 1 minute. Add onions and cook until softened, about 5-7 minutes.
- Build the Flavor: Stir in remaining ground cumin, coriander, and red chili powder. Sauté for 30 seconds. Add crushed tomatoes and a pinch of salt. Simmer for 10-15 minutes.
- Blend for Smoothness: Transfer sauce mixture to a blender and blend until smooth. Pass through a fine-mesh sieve back into the pot.
- Finish the Sauce: Return the smooth sauce to medium-low heat. Stir in remaining butter, heavy cream, honey (or sugar), and kasuri methi. Bring to a gentle simmer.
- Combine and Simmer: Add cooked chicken pieces to the sauce. Stir to coat. Simmer for 5-7 minutes until chicken is fully cooked.
- Serve Immediately: Ladle Das Butter Chicken into serving bowls. Garnish with cream, cilantro, and kasuri methi. Serve hot with basmati rice, naan, or roti.
