Description

Here’s the secret to make your own Filet-O-Fish at home like McDonald’s but bigger and better with our copycat recipe!

Ingredients

Scale
  • 4 piece pollock filet (skinless and boneless; about 4 ounces (115g) each)
  • ⅔ cup water
  • ½ cup all-purpose flour (fluffed, spooned, and leveled)
  • 1 tablespoon cornflour (NOT cornmeal)
  • 1 tablespoon cornstarch
  • Ground turmeric (optional for color)
  • Ground paprika (optional for color)
  • Salt
  • 1 cup breadcrumb
  • Oil for frying (any high smoke point neutral oil)
  • ½ cup mayonnaise
  • 3 tablespoons pickle (finely chopped)
  • 2 tablespoons yellow onion (finely diced)
  • 1 tablespoon capers (minced)
  • 1 tablespoon white vinegar
  • ¼ teaspoon granulated sugar
  • Salt (a generous pinch)
  • 4 burger buns (brioche recommended)
  • 4 slices American cheese

Instructions

  1. Prepare the fish: Pat the pollock filets dry with paper towels. Check for pin bones and remove. Lightly season with salt. Fold the ends of the filet over each other in thirds, making a shallow cut along each fold. Set aside.
  2. Make the tartar sauce: Mix mayo, pickle, onion, capers, vinegar, sugar, and salt in a bowl. Cover and refrigerate.
  3. Make the fry batter: In a bowl, combine all-purpose flour, cornflour, cornstarch, turmeric, paprika, and salt. Add water and whisk until smooth. Set aside.
  4. Fry: Heat oil to 350°F (175°C). Prepare a cooling rack or paper towel-lined plate. Place breadcrumb in a bowl.
  5. Wrap fish in paper towels to dry. Dip each filet in wet batter, then coat in breadcrumb. Repeat for remaining filets.
  6. Fry filets for 3 to 5 minutes until golden brown and cooked through. Flip occasionally. Drain on a cooling rack or paper towels.
  7. Optional – Steam the buns: Boil water in a steamer. Split buns and steam for 10 to 15 seconds. Use immediately.
  8. Assemble and enjoy: Add cheese and tartar sauce to the fish sandwich. Enjoy while hot!
