Festive German Stollen Cookies That Spark Joy This Holiday Season
Ingredients
Scale
- 1 cup Sultanas
- 1 cup Dried Red Currants
- 2 teaspoons Yeast
- 1 cup Milk
- 1/2 cup Sugar
- 4 cups Flour
- 1 cup Ground Almonds
- 2 teaspoons Special Occasion Spice Mix
- 1/2 cup Softened Butter
- 2 teaspoons Vanilla Extract
- 2 large Eggs
- 1/2 cup Candied Citrus Peel
Instructions
- Begin by soaking the sultanas and red currants in boiling water for about 10 minutes.
- In a small bowl, combine lukewarm milk, yeast, and 1 tablespoon of sugar. Let it froth for 5-10 minutes.
- In a large bowl, whisk together the flour, ground almonds, spice mix, and remaining sugar.
- Pour in the yeast mixture, softened butter, vanilla extract, and eggs. Mix until well combined.
- Drain the soaked fruits and fold them into the dough along with the candied citrus peel.
- On a floured surface, knead the dough until smooth and elastic, about 5-7 minutes. Let it rise in a greased bowl for 1-2 hours.
- Preheat your oven to 350°F (180°C). Form the risen dough into 2 oz balls and bake for 15-20 minutes.
- Allow the cookies to cool, then roll them in powdered sugar.
- Optionally, drizzle with a simple icing made from powdered sugar and milk.
Notes
- Substitute raisins for sultanas if preferred.
- Use dried cherries instead of red currants for a different taste.
- Coconut sugar can replace regular sugar.
- Consider whole wheat flour for a nuttier flavor.
- Vegan butter can be used for a dairy-free option.
- Flax eggs can be used instead of regular eggs.
- Omit or replace candied citrus peel as desired.
