Lightly fried until golden and dipped in a smooth vanilla glaze, these homemade glazed donuts stay soft for days and deliver the perfect balance of sweetness and airy texture.
Ingredients
Scale
- Tangzhong
- 3/4 cup water
- 1/4 cup bread flour
- Donut Dough
- 3 cups + 2 tablespoons bread flour
- 1/3 cup granulated sugar
- 1 tablespoon instant yeast
- 1 1/4 teaspoon fine sea salt
- 1/2 cup whole milk, room temperature
- 1 large egg, room temperature
- Prepared tangzhong
- 5 tablespoons unsalted butter, room temperature
- Neutral oil for frying
- Sugar Glaze
- 3 1/2 cups powdered sugar
- 1/3 cup + 1 tablespoon hot water
- 1 teaspoon vanilla paste or extract
- Pinch of fine sea salt
Instructions
- Prepare the Tangzhong: Whisk water and bread flour together in a small saucepan. Cook over medium heat, whisking constantly, until a thick paste forms. Transfer to a bowl and let cool completely.
- Make the Dough: In a stand mixer fitted with a dough hook, combine bread flour, sugar, yeast, and salt. Add milk, egg, and cooled tangzhong. Mix until the dough begins to form.
- Incorporate Butter: Add butter one tablespoon at a time while mixing on low speed. Once incorporated, increase speed and knead until smooth and elastic (about 8–10 minutes).
- First Rise: Shape dough into a ball and place in a lightly greased bowl. Cover and let rise until doubled in size (about 1–1.5 hours).
- Shape Donuts: Roll dough to about 3/4-inch thickness. Cut donut shapes and place on parchment-lined tray. Cover and let rise again until puffy (45–60 minutes).
- Fry: Heat 3–4 inches of neutral oil to 350°F (180°C). Fry donuts in batches for about 1–2 minutes per side until golden brown. Transfer to a wire rack to drain.
- Glaze: Whisk powdered sugar, hot water, vanilla, and salt until smooth. Dip warm donuts into glaze, let excess drip off, and return to rack until glaze sets.
Notes
- Store any leftover donuts in an airtight container.
- Donuts are best enjoyed fresh but can be reheated.
