Description

Enjoy the vibrant and healthy Ukrainian Green Borscht, a tangy soup perfect for spring and summer.

Ingredients

Scale
  • 3–4 medium Potatoes
  • 1 large Carrot
  • 1 small Onion
  • 10 leaves Sorrel
  • 2 tablespoons Chopped Fresh Dill
  • 2 leaves Bay Leaves
  • 1 tablespoon Ghee Butter or Olive Oil
  • 4 cups Filtered Water
  • 2 teaspoons ‘Better than Bouillon’ Vegetable Base
  • ¼ teaspoon Salt
  • 1 tablespoon Sour Cream
  • ½ per serving Hard-Boiled Egg
  • ¼ teaspoon Black Pepper

Instructions

  1. Begin by washing and peeling the medium potatoes and large carrot, then cube them into bite-sized pieces.
  2. Dice the onion finely, and chop the sorrel leaves or spinach into ribbons.
  3. Chop the fresh dill—the prep will make assembling the Green Borscht smoother.
  4. In a large pot, heat 1 tablespoon of ghee or olive oil over medium heat.
  5. Add the diced onion and sauté for about 3 minutes until they turn translucent.
  6. Next, toss in the chopped carrots and continue to sauté for another 3 minutes until they soften.
  7. Pour 4 cups of filtered water into the pot with the sautéed onions and carrots.
  8. Add the cubed potatoes, 2 bay leaves, and 2 teaspoons of ‘Better than Bouillon’ vegetable base.
  9. Turn up the heat to bring the mixture to a boil, then cover the pot and reduce the heat.
  10. Let it simmer on low for about 15 minutes, or until the potatoes are tender.
  11. Once the potatoes have cooked through, stir in the chopped sorrel or spinach along with the dill.
  12. Season the soup with salt if desired and cover the pot, allowing it to rest for about 10 minutes.
  13. While the soup rests, place a small pot of water on the stove and bring it to a boil.
  14. Carefully add the eggs and boil for exactly 9 minutes for hard-boiled eggs.
  15. Once done, transfer them to an ice bath to cool quickly, then peel and set aside.
  16. Ladle the warm Green Borscht into bowls, topping each with half a sliced hard-boiled egg and a dollop of sour cream.
  17. Add black pepper to taste for enhanced flavor.
