Ingredients
Scale
- 3 lbs Yukon gold potatoes (Peeled and thinly sliced to 1/8″ thick)
- 1 1/2 cups 2% milk
- 2 tablespoons unsalted butter
- 2 tablespoons flour
- 4 garlic cloves (Minced)
- 1 1/2 tablespoons fresh thyme
- 1 1/2 cups aged white cheddar cheese (Shredded)
- 1/2 cup parmesan cheese (Grated)
- Pinch of nutmeg
- Salt and pepper
Instructions
- Preheat oven to 400°F. Spray a 13×9″ baking dish with cooking spray.
- To a small saucepan, add the butter. Melt it over medium heat, add in the minced garlic, and sauté for 30 seconds. Then, whisk in the flour to form a paste.
- Add the milk, nutmeg, and fresh thyme. Bring to a boil. Once thickened, remove from heat and stir in half a cup of aged cheddar cheese. Beat well until smooth. Set aside.
- Arrange half of the sliced potatoes in the prepared baking dish. Season with salt and pepper.
- Cover the potatoes with half of the warm cream mixture, half of the shredded white cheddar cheese, and half of the parmesan cheese.
- Arrange the remaining sliced potatoes on top. Season this layer again with salt and pepper.
- Pour the rest of the milk mixture evenly over the potatoes and finish by sprinkling the remaining white cheddar cheese and parmesan cheese on top.
- Bake the dish, uncovered, for 40 minutes or until the potatoes are fork-tender and the top is slightly browned.
