Ingredients
Scale
- 2 cups fresh or frozen corn kernels (thawed and drained if frozen)
- 2 tablespoons butter
- 1 tablespoon honey
- Salt, to taste
- Black pepper, to taste (optional)
- Fresh herbs (parsley, chives, thyme, rosemary, or tarragon), finely chopped
- Red pepper flakes or cayenne (for a spicy kick)
- Grated Parmesan or sharp cheddar cheese
- Toasted nuts or seeds (for added crunch)
- Smoked paprika or fresh lime juice (for garnish)
- Substitute butter with coconut oil or vegan butter
- Use maple syrup instead of honey
Instructions
- Measure out 2 cups of fresh or frozen corn kernels. If using frozen corn, thaw it completely and drain any excess moisture.
- Heat a cast-iron or non-stick skillet over medium heat. Add 2 tablespoons of butter and let it melt slowly until slightly bubbly.
- Add the corn kernels to the skillet and stir to coat them evenly with melted butter. Let the corn cook undisturbed for a few minutes.
- Drizzle 1 tablespoon of honey over the warm corn, then sprinkle with salt and black pepper to taste. Gently stir to combine.
- Optionally, toss in finely chopped fresh herbs or sprinkle with additional butter just before serving. Serve hot.
Notes
- Adjust sweetness by adding more or less honey.
- You can make this dish vegan by using coconut oil and maple syrup.
