Description

Irresistible Chocolate Cream Puffs That Will Delight Your Taste Buds

Ingredients

Scale
  • 2 cups Whole Milk
  • 3/4 cup Granulated Sugar
  • 1/4 cup Cornstarch
  • 1/4 cup Dutch-process Cocoa Powder
  • 4 large Egg Yolks
  • 4 oz Bittersweet Chocolate
  • 1 tsp Vanilla Extract
  • 2 tbls Unsalted Butter
  • 1 cup Water
  • 1 tbsp Granulated Sugar
  • 1/2 tsp Kosher Salt
  • 1 cup All-Purpose Flour
  • 1 cup Cake Flour
  • 4 large Eggs
  • 1/2 cup Brown Sugar
  • 4 tbls Unsalted Butter
  • 1/2 cup All-Purpose Flour
  • 2 tbls Dutch-process Cocoa Powder
  • 1/4 tsp Kosher Salt

Instructions

  1. Whisk together granulated sugar, Dutch-process cocoa powder, and cornstarch until combined. Add egg yolks and mix until smooth. Heat whole milk with sugar until it simmers, then gradually incorporate into the yolk base. Return to low heat and whisk in bittersweet chocolate until thick. Strain, mix in butter and vanilla, cover, and refrigerate for 3 hours.
  2. Mix softened unsalted butter, brown sugar, all-purpose flour, cocoa powder, and kosher salt until smooth. Roll dough out between parchment to 1/4 inch thick, chill until firm, and cut into circles for topping.
  3. Combine water, milk, unsalted butter, sugar, and kosher salt in a saucepan. Bring to a simmer, then remove and stir in all-purpose and cake flour until dough forms. Cool slightly before adding eggs one at a time, mixing until smooth.
  4. Preheat oven to 400°F (200°C). Line a baking sheet with parchment. Pipe even mounds of dough on the sheet, top with craquelin, and bake for 20-25 minutes until risen and golden brown. Keep oven closed during baking.
  5. Cool cream puffs on a wire rack. Use a pastry tip to create a hole in the bottom and fill with chilled pastry cream until heavy. Serve immediately or refrigerate until ready to serve.

Notes

  • Use Dutch-process cocoa for a rich flavor.
  • Avoid table salt for best results.
  • Ensure precise measurements for the right consistency.
  • Chill the pastry cream for optimal filling texture.
