Description

Irresistibly Creamy Strawberry Banana Cheesecake Bars Delight is a delicious dessert that combines fresh strawberries and bananas with a creamy cheesecake filling on a buttery graham cracker crust.

Ingredients

Scale
  • For the Crust:
  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar
  • 1 teaspoon vanilla extract
  • For the Cheesecake Filling:
  • 16 oz cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup sour cream
  • 1 banana, mashed
  • 1 cup fresh strawberries, diced
  • For Topping:
  • ½ cup fresh strawberries, sliced
  • 1 banana, sliced
  • Whipped cream (optional)

Instructions

  1. Preheat your oven to 325°F (160°C). Grease a 9×13-inch baking dish with non-stick spray.
  2. Make the Crust: In a mixing bowl, combine graham cracker crumbs, melted butter, granulated sugar, and vanilla extract. Mix until well combined. Press the mixture firmly into the bottom of the prepared baking dish.
  3. Pre-bake the Crust: Bake the crust in the preheated oven for about 10 minutes. Remove it and let it cool slightly.
  4. Prepare the Cheesecake Filling: In a large mixing bowl, beat the softened cream cheese and sugar together until smooth and creamy. Add the eggs one at a time, mixing well after each addition. Then, add the vanilla extract and sour cream, mixing until fully incorporated.
  5. Add Fruits: Gently fold in the mashed banana and diced strawberries into the cheesecake filling, ensuring even distribution without over-mixing.
  6. Pour Filling Over Crust: Pour the cheesecake filling over the pre-baked crust. Spread it evenly with a spatula.
  7. Bake the Cheesecake Bars: Return the baking dish to the oven and bake for 30-35 minutes or until the edges are set and the center is slightly jiggly.
  8. Cool and Chill: Once baked, remove the bars from the oven and let them cool at room temperature. After cooling, refrigerate for at least 2 hours before slicing.
  9. Slice and Serve: Once chilled, slice the cheesecake bars into squares.
