Description

Lavender-Infused Honey & Whipped Mascarpone Croissants are a delightful treat. They combine the rich flavor of mascarpone cheese with the floral notes of lavender.

Ingredients

Scale
  • 1 batch of croissant dough (store-bought or homemade)
  • 1 cup mascarpone cheese
  • 1/4 cup heavy cream
  • 1/4 cup lavender-infused honey
  • 1 tablespoon powdered sugar (optional)
  • 1 tablespoon dried culinary lavender flowers (for garnish)
  • A pinch of salt
  • 1 egg (for egg wash)

Instructions

  1. Let the dough thaw or prepare homemade dough as directed.
  2. In a mixing bowl, combine mascarpone cheese, heavy cream, powdered sugar (if using), and a pinch of salt. Whip until smooth and fluffy.
  3. On a lightly floured surface, roll out the croissant dough into a large rectangle, about 1/4 inch thick.
  4. Using a sharp knife or pizza cutter, slice the dough into triangles, ensuring the base is wider than the tip.
  5. Place a spoonful of whipped mascarpone at the base of each triangle. Gently roll the dough from the base to the tip, forming a croissant shape.
  6. Place the rolled croissants on a baking sheet lined with parchment paper. Cover with a kitchen towel and allow them to proof in a warm area for about 1-2 hours, or until they double in size.
  7. While the croissants are proofing, preheat your oven to 375°F (190°C).
  8. In a small bowl, whisk the egg with a tablespoon of water. Brush the egg wash over the croissants for a golden finish.
  9. Bake in the preheated oven for 25-30 minutes, or until golden brown and flaky.
  10. While the croissants bake, warm the lavender-infused honey in a small saucepan over low heat.
  11. Once the croissants are baked, remove them from the oven and let them cool slightly. Drizzle with warm lavender-infused honey and garnish with dried lavender flowers if desired.

Notes

  • Store leftover croissants in an airtight container.
  • Use fresh lavender for a stronger flavor.
  • Experiment with different types of honey for unique tastes.
