Description
Lemon Raspberry Swirl Bars are a bright and cheerful spring dessert blending tart lemons and sweet raspberries.
Ingredients
Scale
- 1 cup Fresh Lemons (Freshly squeezed juice preferred)
- 2 cups Raspberries (Can be substituted with strawberries or blackberries)
- 1 cup Granulated Sugar (Essential for sweetening)
- 3 large Eggs (Contributes to creamy structure)
- 1/2 cup Butter (Unsalted for controlling salt levels)
- 1 cup All-Purpose Flour (Gluten-free flour can be used)
- 1 cup Powdered Sugar (Optional but enhances presentation)
Instructions
- Preheat your oven to 350°F (175°C). Line a 9×13-inch baking pan with parchment paper.
- In a large mixing bowl, combine granulated sugar, eggs, lemon juice, and lemon zest. Whisk until smooth.
- Slowly drizzle in melted butter while whisking. Ensure it is cooled to avoid cooking the eggs.
- Sift in all-purpose flour and stir gently until just combined. Avoid overmixing.
- Pour the batter into the prepared pan. Add dollops of raspberry puree and swirl gently.
- Bake for 25 to 30 minutes, until set and a toothpick comes out clean.
- Cool on a wire rack for 15 minutes, then lift out using parchment overhang to cool fully.
- Refrigerate for at least 1 hour before serving. Dust with powdered sugar before serving.
