- 1 cup Unsalted Butter (Use coconut oil for a dairy-free alternative)
- 1 cup Granulated Sugar (Consider brown sugar for a deeper flavor)
- 1 large Egg (A flax egg may be used for a vegan version)
- 1 teaspoon Vanilla Extract (Almond extract can provide a unique twist)
- 1/2 cup Whole Milk (Alternative non-dairy milk works too)
- 1/2 cup Rainbow Sprinkles (Chocolate chips can be substituted)
- 4 cups Confectioner’s Sugar (No substitution recommended)
- 2 tablespoons Milk for Buttercream (Use cream for a richer texture if preferred)
- 1 teaspoon Cake Batter Flavoring (Omit if unavailable)
- as needed Gel Food Coloring (Natural coloring options work as well)
Instructions
- Preheat your oven to 375°F (190°C) and line two baking sheets with silicone mats.
- In a bowl, sift together all-purpose flour, baking powder, baking soda, and fine sea salt.
- In another bowl, beat the softened unsalted butter until fluffy. Gradually add granulated sugar, incorporating the egg and vanilla extract until the mixture is smooth and creamy.
- Gently fold in your dry ingredients into the wet mixture, followed by the whole milk. Mix until just combined, then stir in rainbow sprinkles.
- Transfer your batter into a piping bag and pipe 1-1½-inch rounds onto the prepared baking sheets. Chill in the refrigerator for 20 minutes.
- Bake for 8-9 minutes or until the edges are lightly golden. Allow to cool completely on a wire rack before frosting.
- In a bowl, beat unsalted butter for your frosting, then add confectioner’s sugar and milk alternately until rich and creamy.
- Divide your buttercream into bowls and add gel food coloring to create vibrant hues. Assemble them into a piping bag.
- Pipe a generous amount of buttercream onto one side of a cooled cake and top with another piece.
- Store your completed whoopie pies in an airtight container for up to five days.
