Description

Slow-Roasted Garlic Confit & Rosemary Croissants is a delicious recipe that combines the rich flavor of roasted garlic with flaky croissants.

Ingredients

Scale
  • 1 cup garlic cloves (about 2–3 heads of garlic)
  • 1 cup olive oil
  • 1 tablespoon fresh rosemary, chopped
  • ½ teaspoon sea salt
  • 1 package (about 1 lb) croissant dough (store-bought or homemade)
  • 1 egg (for egg wash)
  • Extra rosemary sprigs for garnish (optional)

Instructions

  1. Preheat your oven to 300°F (150°C) for roasting the garlic.
  2. Prepare the Garlic Confit: Peel the garlic cloves and place them in a small baking dish. Cover the garlic with olive oil and sprinkle with chopped rosemary and sea salt. Cover the dish with aluminum foil and place it in the preheated oven. Roast for about 1.5 hours or until the garlic is soft and golden.
  3. Make the Dough: If using homemade croissant dough, roll it out and shape it according to your preferred method. If using store-bought dough, follow the package instructions.
  4. Incorporate the Garlic: Once the garlic is roasted and cooled, mash it slightly with a fork to create a spreadable consistency. Roll out the croissant dough into a rectangular shape. Spread the roasted garlic confit evenly over the dough.
  5. Shape the Croissants: Cut the dough into triangles and roll them from the wide end to the tip to form croissants. Place the rolled croissants on a baking sheet lined with parchment paper.
  6. Rest the Croissants: Cover the croissants with a clean kitchen towel and let them rest for about 30 minutes at room temperature.
  7. Prepare the Egg Wash: In a small bowl, whisk the egg with a tablespoon of water to create an egg wash.
  8. Brush the Croissants: Preheat your oven to 375°F (190°C). Brush the tops of the croissants with the egg wash.
  9. Bake: Bake the croissants in the preheated oven for 15-20 minutes, or until they are golden brown and flaky.
  10. Cool and Serve: Allow the croissants to cool slightly before serving. Garnish with extra rosemary sprigs if desired.
