Description

Delicious Teriyaki Pineapple Chicken and Rice Stuffed Peppers make a perfect weeknight meal with savory and sweet flavors.

Ingredients

Scale
  • 4 units Bell Peppers (Substitute with poblano or other mild peppers for a twist.)
  • 2 cups Shredded Chicken (Use leftover chicken to save time and effort.)
  • 1/2 cup Teriyaki Sauce (Swap with soy sauce mixed with honey if needed.)
  • 1 cup Pineapple (Fresh or canned, diced. Diced mango is a delightful variation.)
  • 1 cup Cooked Rice (Substitute with quinoa or cauliflower rice for a lighter option.)
  • 1 tablespoon Olive Oil (Sesame oil can enhance the Asian flavor.)
  • 2 cloves Garlic (Minced garlic or garlic powder works as great alternatives.)
  • 1 teaspoon Ground Ginger (Optional, use fresh ginger for a brighter taste.)
  • 1/2 teaspoon Red Pepper Flakes (Optional, skip for a milder dish.)

Instructions

  1. Preheat your oven to 375°F (190°C). Prepare your bell peppers by cutting off the tops and removing the seeds.
  2. Optionally, blanch the peppers in boiling water for about 3 minutes and then transfer them to an ice bath.
  3. In a large skillet, heat olive oil over medium heat and sauté minced garlic for 1-2 minutes until fragrant.
  4. Add shredded chicken, teriyaki sauce, diced pineapple, and any optional ground ginger or red pepper flakes to the skillet. Cook for 5-6 minutes.
  5. Stir in cooked rice and season with salt and pepper. Mix well.
  6. Stuff the chicken and rice mixture into the prepared bell peppers and drizzle with a little olive oil.
  7. Bake the stuffed peppers in a baking dish covered with aluminum foil for 25-30 minutes.
  8. Remove from oven, let cool slightly, garnish with fresh pineapple bits or green onions, and serve.
